Limestone soils allow the vine roots to draw water but do not retain over time. This creates balanced conditions of water stress for the vine. This results in wines that are delicate, highly nuanced, and often exhibit a beautiful minerality. The prime example in Bordeaux is arguably the area of the Grand Crus in Saint-Émilion.
