The grapes are harvested by machine very early in the morning, pressed very gently and settled at a very low temperature. Fermentation under controlled temperature between 16 and 17°C. Aged for 2 months on fine lees, with regular stirring to give the wine a rich mouthfeel. No malolactic fermentation
