Ultimate Provence Rouge is the epitome of a resolutely contemporary Provence wine. Its Syrah and Cabernet grapes exude aromas of Ente plum, blackberry and spicier grey pepper. The grapes are harvested in the early morning and routed rapidly to the winery. Fermentation at 20 to 26°C with regular pump-overs of the marc cap guarantees gentle extraction. The wine is vatted for 4 weeks at most to mellow the tannins without dulling them. Partial ageing in casks procures excellent aromatic complexity.
