Trellised vines, average age 15 years, pruned using the Guyot method. Harvested at night, lightly pressed directly. Free-run juice only, cold stabilisation for 3 days, cold fermentation at 16°C. Clear, sparkling colour, aromas of blackcurrant and violet. On the palate, lovely liveliness, superb balance between acidity and sweetness. A delicious rosé. Long finish. Ideal with seasonal Mediterranean dishes, charcuterie and summer barbecues.
