From Roussillon’s clay-limestone terraces with schist pebbles, this rosé of Grenache Noir and Syrah is harvested early, gently pressed, cool-fermented and briefly tank-aged. Pale pink with peony hues, it shows floral, tangy aromas and fresh notes of redcurrant, pomegranate and white peach. Ideal with red mullet, stuffed squid, grilled vegetables or tapas, served at 8–10 °C.
